ZUMBA Tonight!

Ah finally!!! I get to go back to my Zumba class! Did you know that a single Zumba class can let your body burn up to 600 calories!?!? I LoVe IT!

I haven't been able to go lately because trainer meetings have been during class times, but we're not meeting until Friday this week so YAY I get to go tonight! I think that has really been why I haven't been seeing much results on the scale in the last couple of weeks. I'm pretty sure that I'm gaining a lot of muscle, but as of right now, that's on top of fat... but hopefully pretty soon, that muscle will start eating the fat.

My plan is to start going back to Zumba and maybe meeting the trainer on the other days so then I might be able to combine a great cardio workout with a great resistance training workout for maximum results!

I do have a slight confession to make :/ I went out with my friend Brooke last night, and was pretty naughty and strayed from my diet. I had buffalo balls, and a couple slices of cheese pizza... and a Cosmo. Oye. WHY DO I CHEAT MYSELF LIKE THAT!? I love the food I eat when I'm eating it, then right after I'm like "WhAt DiD I Do!?!?" oh well, I guess a slap on the wrist is necessary and we're back into strict diet mode.

Ok, have you ever heard of Quinoa? Can't pronounce it?? It's pronounced "KEEN-wha". I'm very interested in trying it as it is considered a "super grain" but it's not a grain actually. It's very high in protein and full of lots of good stuff for you. I really want to explore this because I'm so into starchy sides - so this could be a great alternative to having brown rice everyday. Have you tried Quinoa?

    I have made is a few different ways:

    -I make it stove-top in a deep-dish fry pan...equal parts quinoa and water. Then put it in the fridge to cool (this is a cold dish i like to make usually for lunch...or sometimes I make it all hot and then put it in the fridge for lunch the next day)
    -I then bake some salmon and put it in the fridge to cool.
    -cut up cucumber, tomato, avocado, and cilantro
    -combine the veggies with the quinoa and then take the cold cooked salmon and "flake" it into small pieces.
    -Mix everything together, squirt some lemon juice, pepper, and a little salt...sometimes if i want some more taste, ill add italian salad dressing, but with the cilantro, lemon, pepper, and a little salt, its tasty enough :)

    I like it cold because it feels more like a salad and its great for lunch over a couple days.

    For a different flavor, you can "toast" the quinoa before you add the water. Throw it in a deep dish fry pan on the stove and heat them until they just start to turn brown, then add the water. This gives them a "nutty" taste. I usually do this if I am eating it hot for dinner.

    You can really do anything with quinoa. Add it to a greek salad to feel more full (spaghetti squash is GREAT for that!). The grains absorb a lot of flavours...Even if you roast or grills veggies, you can cut them up and mix it with the quinoa.

    Speaking of spaghettin squash, you should really try that as a sub for rice. You can do chicken, veggies, and spaghetti squash for a really filling dinner. Sometimes, i'll shred a zucchini and mix it with the SS for colour and taste. It feels like a starch or grain, but it is healthier. It cooks in the microwave in like only 12mins and is super yummy!
